Filet mignon with herbs and Camargue fleur de sel

Preparation time: 15 min - Time to set aside: 30 min - Cooking time: 30 min

Ingrédients

For 4 people:

1 pork tenderloin

300 g stale bread

2 cloves of garlic, peeled

125 g Parmesan

1 bunch of parsley

1 bunch of tarragon

1 bunch of chives

2 tablespoons of mustard

Le Saunier de Camargue fleur de sel

Olive oil

FILET MIGNON AUX HERBES ET À LA FLEUR DE SEL DE CAMARGUE

Preparation :

Mix the bread, garlic, Parmesan and herbs in a blender.

Spread out the mixture in a rectangular shape on clingfilm.

Brush the pork with mustard and place it in the middle of the rectangle.

Fold the corners of the rectangle over the pork so it is fully covered.

Place in a dish in the freezer for about 30 minutes.

Carefully remove clingfilm and place ingredients in an oven dish. Roast for 30 minutes at 200°C (th. 6-7).

 

Presentation suggestion:

Slice the pork, add the Fleur de Sel and serve!
